 Eggplant is a summer vegetable. Eggplant contains vitamins A, E, C and K. Vitamin A is very beneficial for our eyes and Vitamin C helps to strengthen our skin and hair. Eggplant also contains a lot of iron. Even without knowing all these qualities, we eat eggplant in different ways, sometimes it is cooked as a vegetable with different vegetables, sometimes it is cooked with fish. Besides, eggplant chop is our very favorite food.
